Former Mattawa resident to help start student bakery

SPOKANE — Katelyn Johnson, of Mattawa, graduated May 9 with an associate of science degree in vegetarian culinary arts from Southern Adventist University, near Chattanooga, Tennessee.
As a part of her studies, she completed a 400-hour of internship at Ethos Bakery & Cafe in Richland and Niedlov’s bakery in Chattanooga.
Johnson will begin her professional career at Upper Columbia Academy, a Seventh-day Adventist boarding high school south of Spokane. She will be assisting in starting a bakery in the old cafeteria at the school as an option for student employment, and also a retail bakery for the community.
Her specialty is sourdough artisan breads and cinnamon rolls.
