MOSES LAKE — The secrets to roasting green chile and making great posole is the subject of a cooking class from noon to 3 p.m. Saturday. “Olé Posole” will be at Columbia Basin Technical Skills Center, 900 E. Yonezawa Blvd., and is sponsored by Moses Lake Parks and Recreation.

Steve Armstrong is the instructor. Participants will “learn the secrets of green chiles and how to roast, steam and peel them. From this we will make posole, a hominy and pork soup which is traditional in Mexico and especially in New Mexico, where green chiles rule the roost.”

Each class includes the recipe, ingredients and instructions. Students should wear closed-toe shoes with nonslip soles. Aprons and hats will be available upon request.

The class is for adults and high school-age teens. Cost is $25 per person.
